3 tablespoons of red pistachios shelled
1 cup of plain rice milk
2 cups plain yogurt
1/2 cup sliced green apples
1/2 cup fresh raspberries
1 teaspoon agave nectar
6 ice cubes
On high in a blender place all ingredients except for pistachios. Pour into glass, add pistachios on top and serve.

This is so creative. Whenever I think of lassis I always think of mango, but the idea of one with mango and pistachios sounds amazing, especially since apples are in season.
